Peanut Butter Chocolate Chip Cookies
Ingredients
½ cup (125mL) brown sugar (firmly packed)
¼ cup (65mL) butter or margarine, softened
½ cup (125mL) peanut butter
1 teaspoon (5mL) vanilla
1 egg
1¾ cup (337.5mL) flour
1 teaspoon (15mL)baking soda
&ftrac12; teaspoon (2.5mL) salt
½ cup (125mL) peanuts coarsely chopped
½ cup (125mL) chocolate chips
Directions
- Heat oven to 375°
- Combine sugars, butter and peanut butter and beat until fluffy
- Add vanilla and egg and blend well
- Add salt and baking soda to flour and mix well
- Comnbine flour mixture with butter mixture and combine well
- Form dough into balls 1 - 1.5 inches in diameter
- Place on cookie sheet about 2 inches apart
- flatten with fork dipped in flour or cool water
- Bake for 6 to 10 minutes (until golden brown)
- Remove from cookie sheet and let cool completely before storing
NOTES
- Consider using up to ¾ cup (187.5mL) whole wheat flour instead of white flour
- Peanut butter can be creamy or chunky. We use chunky
- Baking for 10 minutes makes a crispier cookie
