Perfect Chocolate Cake
Ingredients
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
¾ cup (90g) unsweetened cocoa powder
2 cups (400g) granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs (room temperature)
½ cup (112g) vegetable oil
1 cup (240g) buttermilk (room temperature)
1 cup (237g) freshly brewed hot coffee
Directions
- Heat oven to 350°F and prepare 2 or 3 round 8 inch pans (grease and coat with flour)
- Sift flour, sugar, cocoa, baking soda, baking powder and salt into a large bowl
- In separate bowl combine buttermilk, oil, eggs and vanilla
- With mixer on low speed, add wet ingredients to dry until well combined
- Add coffee and mix until combined, scraping the bowl with a rubber spatula
- Pour mixture into two or three 8 inch pans or two 9 inch pans. NOTE: If using two 8" pans, be careful not to overfill
- Bake for 30 - 40 minutes until a toothpick comes out mostly clean
- Cool in the pans for thirty minutes. Then remove from pans and allow to cool completely on a wire rack.
- Prepare your favorite frosting and ice or try Simple Icing
