Minestrone Soup
Ingredients
3 finely sliced carrots
3 tomatoes, chopped
½ lb green beans, diced
1 cup cabbage, shredded
1 small onion, finely sliced
1 tsp butter or margarine
7 cups boiling water
2 OXO chicken cubes
2 OXO beef boullion cubes
1 14oz can kidney beans
1 cup cooked elbow macaroni or noodles
Dash of sage
salt and pepper to taste
Directions
- Cook fresh vegetables in butter for about 10 minutes
- Add kidney beans, macaroni and chick and beef cubes dissolved in boiling water
- Stir and cook for about 10 minutes
- Adjusy seasoning if needed
- Makes 10 servings
