Pineapple-Zucchini Bread

Ingredients

3 eggs
1 cup oil or 1 cup applesauce or half a cup of each
2 cups sugar
2 tsp vanilla
2 cups grated zucchini
1 small tin crushed pineapple, drained
3 cups flour
2 tsp baking soda
1 tsp salt
½ tsp baking powder
1 ½ tsp cinnamon
½ tsp nutmeg
1 cup raisins (optional)
1 cup chopped nuts (optional)

Directions

Mix eggs, oil(applesauce), sugar and vanilla
Add zucchini and pinedapple
Combine the dry ingredients
Combine dry and wet ingredients
Add rfaisins and/or nuts
Pour into 2 load pans or 4 mini-loaf pans
Bake @ 350°F for 1 hour for large pans, about 45 minutes for mini-pans
Makes a very moist, delicious bread.
