Chocolate Miracle Bars (Also known as Nanaimo Bars)


1/2 cup (125 mL) butter
1/4 cup (62.5 mL) sugar
5 tbsp. (75 mL) cocoa
1 tsp (5 mL) vanilla
1 egg
2 cups (500 mL) graham wafer crumbs
1 cup (250 mL) coconut
1/2 cup (125 mL) chopped nuts and/or cherries
1/4 cup (62.5 mL) butter
3 tbsp (45 mL) milk
2 tbsp (30 mL) vanilla custard powder
2 cups (500 mL) icing sugar
4 oz. (113.5 grams) chocolate squares (4 squares)
1 tbsp (15 mL) butter


1. Place softened butter, suga, cocoa, vanilla and egg in bowl
2. Set bowl in dish of boiling water.
3. Stir well until butter is melted and mixture resembles custard.
4. Combine wafer crumbs, coconut and nuts/cherries and add to cooked mixture.
5. Pack evenly into 9" square pan.
6. Set aside to cool
1. Cream butter and add milk which has been combined with custard powder.
2. Blend in sifted icing sugar
3. Spread over mixture above.
4. Let stand 15 minutes to harden.
1. Melt chocolate squares with 1 tbsp butter
2. Spread over mixture.
3. Let cool and cut into bars.
NOTE: We often make one and a half times as much filling and icing to make a thicker bar.
