Cornbread
Ingredients
1 tsp baking soda
1/2 tsp salt
1 1/2 cups of low/no fat plain yogurt
1 Tbsp olive or canola oil
1 egg, lightly beaten
Directions
- Preheat oven to 400°F. Generously oil a 9 inch pie plate.
- Combine cornmeal, baking soda and salt.
- In separate bowl, mix yogurt, beaten egg and oil thoroughly
- Add yogurt mixture to cornmeal mixture and stir until just mixed.
- Pour into pie plate.
- Bake for 25 to 30 minutes. (Toothpick in center comes out clean).
- Let sit on rack for ten minutes, cut into 8 wedges and serve.
Eight servings, 134 calories, 4 g fat, 4 g fiber.
The simplest cornmeal recipe yet. Very good.
