Date Nut Loaf
Ingredients
2 cups (500mL) flour
½ cup (125mL) nuts, chopped
1 egg
1 cup (250mL) sugar
1 Tablespoon butter
1 teaspoon salt
1 teaspoon baking soda
Directions
- Add dates and baking soda to 1 cup boiling water
- Let mixture stand while remaining ingredients are prepared
- Cream butter and sugar
- Add egg, salt and flour
- Add date mixture and mix well
- Pour into a greased loaf pan
- Bake for 1 hour in 325°F - 350°F oven
- Cool on wire rack and remove from pan after a few minutes
