Peach-Orange Marmalade


7 peaches with peel, quartered and stoned
1 orange, cut up and seeds removed
1/3 cup Maraschino cherries, drained
Granulated sugar, amount equal to pulp
½ tsp almond flavoring


  1. Put peaches, orange and cherries through food grinder.

  2. Measure pulp and turn into large pot.

  3. Add same amount of sugar as pulp; add almond flavoring.

  4. Heat and stir until sugar dissolves and mixture comes to a boil.

  5. Boil 30 to 40 minutes, stirring occasionally.

  6. Test: small spoonful cooled on a chilled saucer jells

  7. Pour into hot sterilized half pint jars and screw metal bands on securely.

  8. Optional: for added assurance against spoilage, process in boiling water bath for 5 minutes.

  9. Makes about 5 half pints.
