Cappuccino Cookies
Ingredients
1 teaspoon baking powder
1 teaspoon ground nutmeg
½ teaspoon salt
1 cup butter, softened
2 cups packed brown sugar
2 tablespoons milk
2 tavlespoons instant coffee granules
2 eggs
1 teaspoon rum extract
½ teaspoon vanilla
semisweet chocolate, melted
Directions
- Whisk flour, baking powder, nutmeg and salt in large bowl
- Beat butter in large bowl with electric mixer at medium speed until smooth.
- Add brown sugar and beat uintil well blended
- In small bowl, dissolve coffee granules in milk then add to butter mixture along with eggs, rum extract and vanilla. Beat at medium speed until well blended
- Gradually add flour mixture beating at low speed until just blended
- Shape dough into two 8 inch long logs
- Wrap in plastic (add more flower if dough is too sticky to handle) and refrigerate until firm
- Preheat oven to 350°F. Grease cookie sheets.
- Cut into ¼ inch slixes and place 1 inch apart on sheets
- Bake 10 to 12 minutes or until edges are slightly browned.
- Allow cookies to cool completely, then dip each cookie about 1 inch into melted chocolate.
- Place on wax paper and let stand at room temperature until chocolate is set.
- Store in an air-tight container
Note:
Makes about 5 dozen cookies.
