Quick Chocolate Cookies

Ingredients

1 cup (250 mL) sifted pastry flour
6 tbsp (90 mL) cocoa
1/2 tsp (2.5 mL) baking soda
1/2 tsp (2.4 mL) salt
1 cup (250 mL) brown sugar
1/2 cup 125 ml shortening (room temperature)
1 egg (unbeaten)
1 tsp 5 ml vanilla
1/2 tsp (2.5 mL) almond flavoring (optional)
1 cup (250 mL) quick-cooking rolled oats

Directions

Preheat oven to 350°
1. Sift together flour, cocoa, soda, salt and sugar into bowl.
2. Add shortening, egg, and flaborings.
3. Beat until smooth. Dough will be stiff.
4. Add rolled oats. Mix thoroughly.
5. Drop mixture from teaspoon on greased baking sheet. Flatten with a fork dipped in cold water.
6. Bake in a moderate oven, 350 degrees, for 15 minutes.
7. Remove from baking sheet, cool on a rack, and store in closely covered container.
Makes 2 1/2 dozen cookies, 1" in diameter. If desired, mixture may be pressed 1/4" thick into greased pans and cut in squares after baking.
Notes:
Sometimes we add a few drops of water to make the batter mix better.
We often add about 1/2 cup of coconut to the batter.
Sometimes we also add some chocolate chips.
