Marzipan Bars
Ingredients
Pastry for 8" square pan
Strawberry or raspberry jam to spread on pastry
Filling
½ cup butter
⅔ cup sugar
⅔ cup rice flour
2 eggs
¼ tsp salt
½ tsp almond flavouring
red and green food coloring
Icing
2 tbsp butter
2 tbsp warm milk
1½ cup icing sugar
1 tsp almond extract
Directions
- Spread pastry in bottom of 8" baking pan
- spread jam over pastry
- Blend butter and sugar
- Add eggs and beat until light and fluffy
- Add extract, rice flour and salt
- Divide filling in half: add red coloring to one half, green to the other
- Put small spoonfuls in a checkerboard pattern alternating green and red
- Bake for 30-40 minutes at 350°F
- Allow to cool
- combine icing ingredients (butter, milk, icing sugar and almond extract) and spread on top
- Cut into bars
