Pecan Fingers
Ingredients
1 cup soft butter
2 cups flour
2 eggs (reserve 1)
½ tsp vanilla
1 cup coarsely chopped pecans
Directions
- Combine 1 cup sugar and butter and cream until fluffy.
- Add 1 egg and vanilla and beat until well blended
- Add flour and work into creamed mixture until well blended
- Spread in prepared pan
- Beat second egg and brush on mixture
- Sprinkle with ½ cup sugar, then nuts, then remaining ½ cup sugar, spreading evenly over the top.
- Bake 20 - 25 minutes or until nicely browned
- Cool in pan and cut in fingers to serve.
NOTE: Dark brown sugar gives the best flavour
