Raisin Squares
Ingredients
2 cups seedless raisins
2 cups water
2½ tbsp lemon juice
¾ cup packed brown sugar
⅓ cup flour
½ tsp nutmeg
¼ tsp cinnamon
3 tbsp sugar
⅔ cup water
2 tbsp sugar
Directions
- Heat oven to 400°F
- Roll half of pastry to 14 x 10½ inch size
- Fit into 13 x 9½ x 2inch pan, allowing pastry to go up sides of pan
- Combine raisins, 2 cups water, lemon juice and brown sugar in a saucepan
- Bring to a boil
- Reduce heat and simmer for 5 minutes
- Combine flour, nutmeg, cinnamon and 3 tbsp sugar thoroughly in small bowl
- Gradually stir in ⅔ cup water, mixing until smooth
- Add mixture to raisin mixture, stirring constantly
- Bring back to a gentle boil stirring for five minutes
- Remove from heat and cool a few minutes
- Pour into pastry lined pan
- Roll out rmaining pastry to cover filling
- Prick pastry
- Bake about 35 minutes or until nicely browned
- Remove from oven and sprinkle with 2tbsp sugar.
- Cut in pieces and serve hot or cold
