Scotch Shortbread
Ingredients
1 cup fruit sugar
1 cup rice flour
4 cups sifted flour
1 beaten egg yolk
Directions
- Cream butter
- Add dry ingredients a little at a time
- Mould together, add yolk
- Place on 10 x 15 inch cooking sheet
- Spread with a rolling pen
- Prick dough with fork
- Bake for 50 minutes at 300°F
- Cut into fingersnwhile still warm
Note: Confectioner's (icing) sugar may be substituted for fruit sugar
