Festive Smilies
Ingredients
- 1 cup butter, softened
- 1 cup icing sugar
- 1 egg
- 1½ teaspoons rum extract
- 2½ cups flour
- ¼ teaspoon salt
Directions
- Mli>Cream sugar and butter in small mixing bowl until light anbd fluffy
- Beat in egg and rum extract
- Combine flour and salt and add gradually to creamed mixture
- Roll out until approximately ¼ inch thick.
- Cut using shapes or 1½ inch round cutter.
- Bake at 375° for approximately 11 minutes. Cookies should be lightly browned
- Cool for a few minutes before removing to wire racks.
- Prepare your favorite frosting or use recipe below.
- Frost one cookie and place second cokie on top to make a sandwich
- With icing bag, make a smiley face on top cookie.
- Store in airtight container. Makes about three dozen cookies.
Icing/Filling
- 2 tablespoons of soft butter
- 2 cups icing sugar
- 1 teaspoon flavouring (peppermint for Christmas, vanilla or almond, etc.)
- 1 tablespoon milk
- A few drops of food colouring if desired
Quantities are approximate and should be adjusted to obtain a slightly stiff consistency. Be sure to use real butter which will cause the icing to stiffen on standing. Mix ingredients together and use as directed above.
