Festive Smilies



    Mli>Cream sugar and butter in small mixing bowl until light anbd fluffy
  1. Beat in egg and rum extract

  2. Combine flour and salt and add gradually to creamed mixture

  3. Roll out until approximately ¼ inch thick.

  4. Cut using shapes or 1½ inch round cutter.

  5. Bake at 375° for approximately 11 minutes. Cookies should be lightly browned

  6. Cool for a few minutes before removing to wire racks.

  7. Prepare your favorite frosting or use recipe below.

  8. Frost one cookie and place second cokie on top to make a sandwich

  9. With icing bag, make a smiley face on top cookie.

  10. Store in airtight container. Makes about three dozen cookies.


Quantities are approximate and should be adjusted to obtain a slightly stiff consistency. Be sure to use real butter which will cause the icing to stiffen on standing. Mix ingredients together and use as directed above.
