Apricot Custard


(Ingredient quantities are for a single serving)
3 medium apricots, chopped
1 egg, beaten
½ cup (125 mL)skim milk
1 packet (1 - 2 tsp.) sweetner
¼ tsp (1 mL) vanilla
dash ground nutmeg


  1. Add apricots to a custard cup or soufflé dish. Place cups in shallow baking pan

  2. In a small mixing bowl, combine egg, milk, sweetner and vanilla. Pour mixture over apricots

  3. Sprinkle with nutmeg

  4. Pour boiling water around custard cups to a depth of 1 inch. Place baking pan in oven

  5. Bake in 325°F (160°C) oven for 30 - 35 minutes or until knife inserted in center comes out clean
