Banana Cake


¼ cup butter or margarine
¼ cup shortening
1 cup sugar
2 eggs, well beaten
2 ripe bananas, mashed fine*
¼ tsp vanilla
1¾ cups flour
2 tsp baking powder
dash of salt
½ cup sour milk*
1 tsp baking soda


  1. Preheat oven to 350°F.
  2. Grease square pan (8 or 9 inch pan) and dust lightly with flour
  3. Cream butter and shortening together.
  4. Blend in sugar gradually. Beat until light and fluffy
  5. Add eggs and beat until well combined.
  6. Blend in bananas and vanilla.
  7. Blend flour, baking powder and salt in separate bowl.
  8. Combine milk and baking soda
  9. Add dry ingredients alternatively with milk mixture. Blend after each addition.
  10. Pour into pan. Bake ¾ hour until toothpick in center comes out clean.

*NOTES:You can make sour milk by adding approximately a capful(1 ½ tsp) of lemon juice to the milk.
Ripe bananas may be frozen until you are ready to use them.
