Banana Cake
Ingredients
¼ cup shortening
1 cup sugar
2 eggs, well beaten
2 ripe bananas, mashed fine*
¼ tsp vanilla
1¾ cups flour
2 tsp baking powder
dash of salt
½ cup sour milk*
1 tsp baking soda
Directions
- Preheat oven to 350°F.
- Grease square pan (8 or 9 inch pan) and dust lightly with flour
- Cream butter and shortening together.
- Blend in sugar gradually. Beat until light and fluffy
- Add eggs and beat until well combined.
- Blend in bananas and vanilla.
- Blend flour, baking powder and salt in separate bowl.
- Combine milk and baking soda
- Add dry ingredients alternatively with milk mixture. Blend after each addition.
- Pour into pan. Bake ¾ hour until toothpick in center comes out clean.
*NOTES:You can make sour milk by adding approximately a capful(1 ½ tsp) of lemon juice to the milk.
Ripe bananas may be frozen until you are ready to use them.
