Peach Upside-Down Cake


¼ cup butter or margarine
½ cup brown sugar
2 cups (approx.) sliced peeled fresh peaches (or canned)

½ cup butter or margarine
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 ¼ cup flour
1 ¼ teaspoons baking powder
¼ tsp salt
½ cup milk


Melt ¼ cup butter and pour into a 9 inch round baking pan
Sprinkle with brown sugar
Arrange peach slices in a single (or double) layer
In mixing bowl, cream ½ butter and sugar. Add vanilla and egg and mix well.
Combine flour, baking powder and salt
Add flour mix to batter alternately with milk.
Spoon over peaches
Bake at 350° for 45-50 minutes until toothpick comes out clean.
Serves eight.
Delicious and rich. We plan to experiment with slightly smaller amounts of sugars and butter.
