Versatile Pudding


3 cups milk
3 eggs
¾ cup sugar or Splenda
1/3 cup flour
1 Tbsp corn starch
2 Tbsp butter/margarine

One of the following:


  1. Heat milk in a saucepan until bubble form around edges

  2. Meanwhile, stir together eggs, sweetner, flour and corn starch in a bowl

  3. Pour some of the milk into the mixture and whisk well

  4. Whisk mixture into remaining milk, stirring constantly

  5. Cook over medium heat until misture starts to boil (about 5 minutes), whisking frequently

  6. Reduce heat and continue until thickened (mounds on a spoon)

  7. Remove from heat and add butter and ONE of the flavor combinations above. Whisk until well mixed and melted

  8. Pour into serving dishes and cool. Makes 6 or more servings
