Basic Pancakes


11/3 cups flour
1 egg
3 tsp. baking powder
1¼ cups milk
3 Tbsp. melted butter or vegetable oil
½ tsp. salt
3 Tbsp. sugar
¼ tsp. vanilla


  1. Mix together dry ingreients and make well in center

  2. Beat egg slightly, add milk and mix.

  3. Add to dry ingredients. Add melted butter and vanilla

  4. Stir quickly until just combined (still lumpy)

  5. Pour ¼ cup per pancake on hot griddle

  6. Cook until pancake is filled with bubble and underside is golden brown.

  7. Flip and continue to cook until underside is golden brown

  8. Serve hot with syrup, honey, jam or jelly, and bacon or sausages

  9. Do not turn pancakes more than once.

Yield: 10 - 12 pancakes
