Squash Puff


2 cups mashed, cooked, butternut squash
½ cup spreadable cream cheese
½ cup bread crumbs
2 Tbsp brown sugar
1 egg
dash of ground ginger
dash of pepper
dash of salt


  1. Combine ingredients and place in greased, shallow baking dish (1 L size)

  2. Sprinkle some more bread crumbs over the top

  3. Bake at 350°F for thirty minutes or until lightly browned

Notes: Makes 4 (½ cup) servings. I have used regular cream cheese with excellent results.

This is a very tasty dish. Will find favor even with those who dislike squash.
