Waffles

Ingredients

3½ cups (875 mL) all-purpose flour
2 tsp. (10 mL) salt
½ cup (125 mL) sugar
2 Tbsp. (30 mL) baking powder
8 large eggs, separated
3 cups (750 mL) milk
1 cup (250 mL) butter, melted
2 cups (500 mL) hot raspberry syrup (optional)

Directions


  1. Preheat waffle iron

  2. Sift together flour, salt, sugar and baking powder, making a well in center

  3. In separate bowl, whisk together egg yolks, milk and melted butter

  4. Add to dry ingredients and stir until just combined. Batter will be slightly lumpy.

  5. Whip egg whites to soft peaks and fold into batter in two additions.

  6. Ladle about ¾ (180 mL) cup of batter into waffle iron (actual amount depends on type of waffle iron)

  7. Cook waffles until they are crisp, golden and cooked through

  8. Serve hot with raspberry syrup or maple syrup.
