Waffles
Ingredients
2 tsp. (10 mL) salt
½ cup (125 mL) sugar
2 Tbsp. (30 mL) baking powder
8 large eggs, separated
3 cups (750 mL) milk
1 cup (250 mL) butter, melted
2 cups (500 mL) hot raspberry syrup (optional)
Directions
- Preheat waffle iron
- Sift together flour, salt, sugar and baking powder, making a well in center
- In separate bowl, whisk together egg yolks, milk and melted butter
- Add to dry ingredients and stir until just combined. Batter will be slightly lumpy.
- Whip egg whites to soft peaks and fold into batter in two additions.
- Ladle about ¾ (180 mL) cup of batter into waffle iron (actual amount depends on type of waffle iron)
- Cook waffles until they are crisp, golden and cooked through
- Serve hot with raspberry syrup or maple syrup.
