Zucchini with Apples
Ingredients
1 Tbsp butter
1 medium onion, chopped
2 apples, peeled and chopped
2 tomatoes, peeled and chopped
2 Tbsp fresh parsley, chopped
½ tsp salt
pepper to taste
Directions
- Drop zucchini slices into boiling water for 30 seconds. Remove immediately and drain.
- Melt butter in a large pot.
- Add onions; sauté until transparent
- Add apples, tomatoes and zucchini; stir well
- Add parsley, salt and pepper
- Cook, covered, over low heat for 5 to 10 minutes, until zucchini is soft
- Serve as side dish
